Mostly found in Colombia’s Huila region, Papayo is relatively rare outside of Huila, and little is known about how it arrived in Colombia. Initially believed to be a Caturra mutation, genetic testing by World Coffee Research revealed a close relationship with Ethiopian landraces. Papayo cherries are distinguished by their elongated shape and are named after their papaya-like color.

Jairo has utilized the carbonic maceration process—a winemaking technique that uses carbon dioxide during fermentation—to create a complex, fruit-forward profile.
