After carefully selecting and harvesting ripe cherries, they undergo a 70-hour natural fermentation in tanks. Following washing, the coffee is dried for 15 days in fully ventilated marquesina barrels — specialized wooden drying structures that allow slow, shaded drying with controlled airflow.
