On the first sip, it evokes the sensation of paprika-seasoned Doritos or eating a taco in Mexico. The dominant sweet paprika character — especially as it cools — is joined by ginger candy sweetness. There’s also a refreshing brightness reminiscent of orange soda. It’s a complex yet highly drinkable coffee, offering a truly distinctive and unconventional experience, with a medium-long finish and medium phosphoric and citric acidity.

Also known as “Ají Bourbon,” Chili Bourbon is a rare Colombian variety known for its spicy, pepper-like character. Initially believed to be a mutation of Bourbon, genetic testing in 2022 revealed it to be a hybrid of Congo and Ethiopian Geisha varieties.
