Yellow Caturra, or Caturra Amarillo, is a variation of the Caturra variety distinguished by ripe yellow cherries, the result of a recessive gene. It ripens faster than Red Caturra. A cross between Yellow Caturra and Mundo Novo led to the development of the Catuai hybrid.
Yellow Caturra is known for honey-like sweetness, citrus acidity, chocolate notes, and a medium to full body. It is typically characterized by lemon-like bright citrus acidity, cocoa, tropical fruit, and floral sweetness. While most commonly washed processed, some of the most expressive lots use anaerobic fermentation to enhance flavor complexity.
